Lot ini terbuat dari varietas Gesha dan diproses dengan metode Natural. Setelah buah kopi dipetik dengan tangan dengan hati-hati ketika mencapai kematangan puncaknya, mereka dibawa ke wet mill di lokasi. Buah kopi kemudian menjalani fermentasi selama 72 jam.

Selanjutnya, mereka ditempatkan secara merata di atas tempat pengeringan untuk dikeringkan dalam kondisi terkendali selama 40 – 45 hari. Suhu dan kelembapan relatif dipantau dengan hati-hati selama periode ini untuk memastikan suhu tidak melebihi 25°C. Setelah pengeringan selesai, kopi dikemas dan disimpan sebelum hulling dan disiapkan untuk ekspor.

Kopi pertama kali tiba di Peru pada abad ke-18, namun jumlahnya sangat sedikit dan tidak diekspor hingga abad ke-19. Kemudian, pada akhir abad tersebut, selama wabah penyakit Karat Daun Kopi di Indonesia, orang Eropa memutuskan bahwa Peru akan menjadi negara yang ideal untuk menanam lebih banyak kopi. Seiring waktu, orang Inggris memperoleh lebih dari 2 juta hektar tanah setelah Peru gagal membayar utang. Dengan demikian, peternakan kopi yang luas mulai berkembang. Seiring waktu, peternakan-peternakan tersebut dibagi dan dijual kepada penduduk lokal setelah Perang Dunia, memberikan kesempatan kepada orang-orang pribumi yang bekerja di peternakan untuk memiliki tanah mereka sendiri. Namun, pertanian kopi tidak terstruktur dengan baik, yang mengakibatkan jalan yang buruk dan petani tidak tahu cara memproses dan menjual kopi mereka.

Setelah tanah direbut kembali oleh pemerintah Peru, dan penduduk lokal mulai mengelola peternakan mereka, produksi kopi segera berkembang. Koperasi dibentuk untuk membantu petani dalam proses dan pemasaran, meskipun tidak tanpa perjuangan. Dibutuhkan waktu bagi kopi untuk stabil setelah krisis ekonomi, peperangan, dan gejolak politik. Petani kopi Peru juga tidak memiliki akses ke pestisida, pupuk, atau agrokimia lainnya, sehingga Peru menjadi eksportir terbesar kopi Arabika organik. Saat ini, kopi tumbuh terutama di tiga wilayah Peru: Amazonas, San Martín, dan Chanchamayo di sepanjang lereng timur Pegunungan Andes. Produsen kecil perlahan-lahan bergabung dengan koperasi untuk menjual kopi mereka ke pasar internasional.

Lot kopi ini berasal dari ketinggian tinggi di wilayah Amazonas, Peru, dari Pegunungan Ayuyus di Finca Los Santos. Farm ini telah menanam kopi sejak tahun 1941, dan keluarga Santos telah selalu berdedikasi untuk menanam kopi yang luar biasa selama beberapa generasi. Saat ini, peternakan ini dikelola oleh generasi ketiga dari keluarga tersebut.

Tanah di peternakan ini kaya akan bahan organik berkat pemangkasan dan penyiangan yang terus menerus dilakukan di peternakan. Pisang, singkong, dan jagung juga tumbuh di Finca Los Santos untuk memberi makan keluarga dan pekerja. Mountain Water Process–Descafeinadores Mexicanos

Proses unik dekafeinasi non-kimia ini menggunakan air jernih dan murni dari gunung tertinggi di Meksiko, yaitu Pico de Orizaba, yang dikenal sebagai Citlaltépetl dalam bahasa suku asli. Proses ini dilakukan dengan merendam biji kopi mentah dalam air untuk mengekstrak kandungan kafein. Air tersebut menjaga komponen rasa yang larut dari biji kopi, sehingga melindungi karakteristik asli kopi tersebut.
Untuk menghilangkan kafein dari air yang mengandung elemen rasa kopi larut ini, air kemudian disaring melalui sistem filtrasi. Proses ini menghasilkan larutan yang terdiri dari air pegunungan asal dan rasa kopi larut yang kini bebas dari kafein.
Biji kopi yang dihasilkan memiliki kadar kafein-free 99,9%. Biji-biji ini kemudian dikeringkan hingga mencapai kadar kelembapan yang diinginkan, dikemas, dan siap diekspor ke TGC di Indonesia.

Proses Mountain Water ini telah dipatenkan dan juga tersertifikasi secara organik sesuai dengan regulasi dari OCIA, NOP, dan JAS. Dan juga sertifikasi Kosher.

Mewakili sekitar 2% dari produksi kopi global, Meksiko dikenal luas karena kopinya yang ditanam di wilayah Chiapas dan Oaxaca yang terletak di bagian selatan negara tersebut. Kopi pertama kali tiba di Meksiko bersama para penjajah Spanyol pada abad ke-18. Setelah merdeka dari Spanyol, negara tersebut, meskipun dalam kondisi penuh gejolak, mulai secara perlahan membudidayakan perkebunan kopi di negara bagian selatan. Perselisihan perbatasan dengan Guatemala terjadi ketika orang-orang Eropa membeli lahan dalam jumlah besar, yang mendorong populasi masyarakat adat naik ke daerah pegunungan.
Revolusi Meksiko menyebabkan Reformasi Agraria yang mendistribusikan kembali tanah kepada masyarakat lokal. Produksi kopi skala kecil meningkat pesat dengan dibentuknya Institut Kopi Nasional Meksiko (INMECAFE) pada tahun 1973, namun kemudian dibubarkan pada tahun 1989 setelah terjadinya Krisis Kopi Internasional. Karena tidak lagi ada dukungan dari badan pemerintahan kopi, para produsen terpaksa menjual kopi mereka dengan harga rendah kepada pedagang lokal (coyotes).
Berkat terbentuknya koperasi dan organisasi produsen lainnya, para petani kopi mulai mendapatkan lebih banyak dukungan serta akses yang lebih baik ke pasar internasional. Saat ini, produksi kopi telah stabil dan tetap kuat. Lot ini adalah salah satu contoh bagaimana kopi Meksiko telah berkembang dengan baik.

Chiapas terletak di bagian selatan Meksiko, dengan keanekaragaman hayati yang kaya dan ketinggian yang terus meningkat — wilayah ini dikenal memiliki tanah yang subur dan iklim yang ideal untuk produksi kopi. Sebagai salah satu dari lima Negara Bagian Maya di Meksiko, Chiapas memiliki kekayaan sejarah arkeologi dan budaya yang luar biasa.
Di seluruh wilayah Chiapas, khususnya di munisipalitas El Porvenir dan Llano Grande, terdapat kelompok-kelompok kecil petani kopi yang menanam kopi di daerah pegunungan yang tinggi dan subur. Perkembangan hingga saat ini melibatkan 2.708 produsen, di mana 772 di antaranya adalah perempuan.
El Porvenir berarti ‘masa depan’, yang tercermin dalam ketinggiannya yang menjulang, keanekaragaman hayatinya yang kaya, serta potensinya untuk menciptakan masa depan yang harmonis melalui produksi kopi berkualitas tinggi dan pelestarian ekosistem. Wilayah ini juga berbatasan dengan Cagar Biosfer El Triunfo, yang menjelaskan keberagaman flora dan fauna asli yang terdapat di daerah tersebut.

Secara umum, setelah para petani memetik dan mengantarkan ceri kopi, ceri tersebut disortir berdasarkan kualitas dan dipulping untuk menghilangkan kulit luarnya. Setelah bersih, kopi kemudian difermentasi selama 24 jam untuk menguraikan lapisan lendir (mucilage) di bagian luar. Setelah proses fermentasi selesai, biji kopi dicuci dan kemudian disebar secara merata di atas lantai semen untuk dijemur di bawah sinar matahari hingga mencapai kadar kelembapan yang ideal.
